Our ladies are learning to process our vegetables by canning, and freezing them. We use our community kitchen for teaching classes on canning. When the harvest is ready, the men mostly pick them and the ladies are in preparation of cleaning and canning the vegetables.

Last year around September we had a canning class held with Muscogee (Creek) National Council Representative, Okmulgee District, Pearl Thomas. She taught us how to can her delicious sweet cucumber pickles. Out of our garden we saved the big over ripe cucumbers and put them to good use.

"I burned purple hull peas over a year ago to have blueing for dumplings, last year we didn't plant any purple hulls, but this year we will", says Rita Williams.
